October Haul + Penne Pepperonata Recipe

This month's haul was all boots/booties with the exception of one flannel shirt and a bunch of soft toys that I couldn't resist. As mentioned in the last post, I couldn't help getting the Target wedge booties and also decided to get these Caslon booties since I'm always a fan of how comfortable this brand is for me. 

Here are some recent Target finds:

I was really into these super tall UGG thigh-high boots at first because I love how these will keep me super warm come winter when commuting to work but they're honestly super hard to walk and sit in so I'm hopeful an Aldo version I purchased recently will be just as warm and easier to wear.

I'm really into the recent flannel trend and this one in black, white, and pink that caught my eye in the H&M girls section when I went to pick up some plushies for the girls.

Here's a recipe of Penne Pepperonata that I really enjoyed: 

PENNE PEPPERONATA
Prep Time: 10 minutes
Cook Time: 11 minutes
Ingredients:
1 lb penne pasta
2 tablespoons olive oil
2 red, yellow, or orange sweet peppers
8 oz diced Canadian bacon
12 oz halved mixed cherry tomatoes
1 can (8 oz) tomato sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup heavy cream
1/4 cup grated Parmesan
Directions:
1. Bring a large pot of salted water to a boil.
2. Add penne pasta and cook until al dente, 10 minutes.
3. Drain. Meanwhile, heat olive oil in a large skillet over medium heat.
4. Add peppers and Canadian bacon. Cook 3 minutes.
5. Stir in cherry tomatoes and cook 3 minutes.
6. Stir in tomato sauce and 1/4 teaspoon each salt and pepper.
7. Simmer 5 minutes.
8. Remove from heat and stir in heavy cream.
9. Toss sauce with penne and top with Parmesan.
Serves 6.
