June Haul + Green Bean Stuffed Mushrooms

I shopped a lot online at Express and Target but only kept one from each for the month of June:




I love the look of these Target shorts but they do wrinkle easily - also in love with these Amazon sandals, which look even prettier in person. Based on reviews, I got the adjustable strap ones and they fit really well on me in size 4.5. :)

Though I didn't take a photo of them before they were gobbled up, here's a quick and yummy recipe for 'healthy' stuffed mushrooms:

GREEN BEAN CASSEROLE STUFFED MUSHROOMS

Ingredients:
~30 Baby Bella Mushrooms with stems removed
1/2 cup cooked green beans
1/4 cup low fat or lighter condensed cream of mushroom soup
1/2 oz grated Parmesan cheese
1/2 teaspoon minced garlic
1/8 teaspoon garlic powder
1/8 teaspoon salt and pepper
dash of nutmeg
3 Tablespoon oats, lightly pulsed in processor but not blended to a flour
Directions:
1. Toast pecans by baking at 400 degrees in the oven for five minutes.
2. Blanch green beans for 2-3 minutes until brightly green. Drain and dry.
3. Whisk oil, balsamic, lemon juice, dijon, and salt and pepper together as dressing. Set aside.
4. Toss the rest of the ingredients lightly with the dressing mixture to combine.
Serves 30.

9.5 Calories
1.3g Carbs
0.2g Fat
1g Protein
