September Haul + Spanish Rice

I actually didn't purchase anything for myself the month of August for the first time ever, not only because it has been super busy being a mother but because I've only been shopping for the baby. This is what I shop for now:


But I did shop in September and ended up keeping a pair of grey distressed jeans from Express and 3 pairs of workout pants from Under Armour because it's time to get back into shape. After attending a Pilates class, which used to be easy for me, I realize how out of shape I am from not working out during the past 2 months so I definitely have my work cut out for me.



Here's an easy recipe for easy Spanish rice, though I have no idea when I'll ever have time to cook again:

SPANISH RICE
Total Time: 20 minutes
Ingredients:
1 lb. lean ground beef (90% lean)
1 large onion, chopped
1 medium green pepper, chopped
1 can (15 oz.) tomato sauce
1 can (14.5 oz.) no-salt-added diced tomatoes, drained
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
2-2/3 cups cooked brown rice
Directions:
1. In a large skillet, cook beef, onion, and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain.
2. Stir in tomato sauce, tomatoes and seasonings; bring to a boil. Add rice; heat through, stirring occasionally.
Serves 4.
