OOTD + Buffalo Tofu

I had been procrastinating the donation of my clothes for a long time now but it turns out I'm so glad I did because I found myself digging through it a few weeks ago to take all my skirts back out that were too big at the waist because they're now perfect to sit comfortably over my belly. :)

And here's a delicious recipe for buffalo tofu. Now that I have gestational diabetes (more on this soon), I've been trying to eat a lot more protein and veggies rather than carbs and this is a great source of protein:

BUFFALO TOFU
Ingredients:
1 package of extra firm tofu, pressed and cut into cubes (13.5 oz package)
1/2 cup Greek yogurt
1 tablespoon almond milk
1/2 cup water
1/2 teaspoon garlic powder
1/2 cup oat flour
1/2 cup buffalo wing sauce
1/2 tablespoon melted butter of choice
pinch of salt
Directions:
1. Preheat oven to 450 degrees.
2. Whisk together Greek yogurt, milk, water, garlic powder, and oat flour until well combined.
3. Lightly stir yogurt mixture on tofu until well coated, being gentle so you don't break up the tofu.
4. Place tofu on baking sheet lined with foil and sprayed.
5. Bake for 15-18 minutes, until coating bakes over tofu bites.
6. Combine buffalo wing sauce, butter, and salt.
7. Pour sauce over tofu pieces and toss lightly on the baking sheet to coat thoroughly.
8. Bake for another 8-12 minutes.
Serves 4.

114 calories
5g carbs
5g fat
13g protein
