It's a Girl! + Easy Lemon Cookies

I didn't want to at first because I thought it would be a bit much since I'll have a baby shower next month, but enough of my friends and family and A too really wanted it so I ended up having a small gender reveal party with some of my closest friends and family earlier this month and I'm really glad I did. :)



I had the envelope in my possession for a good two weeks but luckily didn't feel any urge to try to look inside. When the day finally came and we cut into the cake, I was so anxious!


It's a girl! I didn't have much of a preference but I am so happy to have a little girl because there's so much we'll be able to do together and so much clothes and accessories I can share! :)


The biggest hit on the dessert table were the lemon cookies, and they're so quick and easy to make! Here's the recipe:


LEMON COOKIES
Ingredients:
1 package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract (or substitute lemon juice)
1/3 cup confectioners' sugar

Directions:
1. Preheat oven to 375 degrees.
2. Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended.
3. Drop teaspoonfuls of dough into a bowl of confectioners' sugar.
4. Roll them around until they're lightly covered.
5. Once sugared, put them on an ungreased baking sheet.
6. Bake for 6-9 minutes in the preheated oven. The bottoms will be light brown, and the inside chewy.

Yields 36.
