Bridal Shower + Chicken Parmesan

I haven't had the time to post this yet until now but want to share my absolutely amazing Bridal Shower thrown by my wonderful bridal party. :)

And after indulging so much on brunch, here's a recipe for a healthier version of chicken parmesan that's super yummy:


CHICKEN PARMESAN
Ingredients:
4 oz boneless skinless chicken breast
2 tablespoons Greek Yogurt
2 tablespoons egg whites
1/4 cup oats, lightly blended in processor/nutri bullet
1/4 cup cornflakes, lightly blended in processor/nutri bullet
1 tablespoon bread crumbs
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup marinara
0.5 oz shredded mozzarella
1/2 tablespoon parmesan

Directions:
1. Preheat oven to 375 degrees.
2. Combine corn flakes, oats, garlic powder, bread crumbs, and salt/pepper in a flat dish (or tupperware).
3. Combine Greek yogurt and egg whites in another flat dish or tupperware.
4. Coat chicken in the Greek yogurt mixture and then dredge in the corn flake mixture, covering completely (there will be left over).
5. Place on a baking sheet lined with foil and sprayed with olive oil cooking spray, and spray a little cooking spray on the chicken as well.
6. Cook for 16-18 minutes, until crispy and browned.
7. Remove from oven and top with 1/4 cup marinara, mozzarella, and parmesan.
8. Return to oven for 305 minutes, until cheese is melted.

Serves 1.
