June Haul (Serendipitous Shopping!) + Pretzel Crusted Chicken

I think shopping is very serendipitous and is all about being in the right place at the right time, whether browsing in stores or online, which, I feel, is the way a lot of things work in life. I love the feeling of stumbling upon must-have pieces when browsing a website or when popping into a store, which is how I've been finding many things lately, since I'm refraining from shopping on purpose. :)

This month's haul attributes mostly to that and here it is:


As you can see, I've bought yet another pair of the Crocs Women's Leigh Wedges and because they are so comfortable. I highly recommend them as a comfortable shoe with a wedge heel. I've found myself running in them before with no problem whatsoever. I'm very happy I found a hat for my upcoming honeymoon when browsing Aldo one day too and the S/M surprisingly fits my small head perfectly. :)

I've been cooking almost everyday now that the wedding is just over a month away.  I made this earlier this month and love it because it satisfies my craving for breaded chicken in a healthy and delicious way:

PRETZEL CRUSTED CHICKEN

Ingredients:
8 oz chicken tenderloins/breast (2 oz pieces)
40g pretzels (about 1 cup)
3 tablespoons bread crumbs
1/2 teaspoon garlic powder
1/4 cup honey mustard
1/4 cup nonfat Greek yogurt
1 teaspoon dijon mustard
1 egg white (or 2 tablesppons substitute)
salt & pepper

Directions:
1. Preheat oven to 375 degrees.
2. Lightly pulse pretzels in a blender or processor until they're broken up but not processed too finely. Chunks are good!
3. Combine pretzels, bread crumbs, and garlic powder in one shallow dish/bowl/tupperware. Set aside.
4. Combine mustards, yogurt, egg whites, and salt & pepper, seasoning to taste, in a separate shallow dish/bowl/tupperware.
5. Dredge the chicken through the yogurt mixture, completely coated, followed by the pretzel crust mixture. Transfer coated tenderloin to a baking sheet lined with foil and sprayed.
6. Repeat for remaining tenderloins.
7. Bake for 30-35 minutes, until browned and crisped as desired.

Serves 2.

30g protein
