Zella Leggings Review + Stuffed Peppers Recipe

As mentioned here, I couldn't resist shopping Nordstrom's half-yearly sale and one of the last packages to come in are some Zella leggings (Zella 'Live In' Capris, Zella 'Live In' Streamline Reversible Mesh Inset Capris, Zella Girl 'Freedom'  Leggings). I noticed a friend raved about them and I find that they're very comfortable and fit well so I'm happy with them so far. :)

Here's one of the last few recipes I'll be sharing in a while since I still won't be able to cook due to my home renovations. This one is a healthy recipe for Stuffed Peppers. :)


3 red bell peppers, top or sides cut off and insides removed
8 oz extra lean ground turkey breast
1/2 cup chopped onion
1/2 cup chopped zucchini/squash
1/2 cup sliced mushrooms
1 teaspoon minced garlic
3/4 cup tomato sauce
1/2 teaspoon garlic powder
salt and pepper to taste

1. Preheat oven to 375 degrees.
2. Cook turkey in skillet until lightly browned.
3. Add everything else except bell peppers, cooking 3-5 minutes. Use cooking spray if necessary.
4. Stuff peppers with mixture, and place peppers in a baking dish with 1/8" water on the bottom to keep them moist and avoid from sticking. Add tops/sides as well.
5. Cook for 20 minutes.

Serves 6.
