Birthday Louboutins + Chicken Parm Sandwiches
Thanks to A's inability to choose presents, he came up with the amazing last-minute idea to buy me a pair of Louboutins. I've never really appreciated this aspect of him until now. :)
To prepare for the store visit, I did some research online and narrowed it down to either a pair of black booties/boots like the Bella Ankle Boot, the Simple 100 Pump in Nude, or the Gortika Patent Leather Ankle Boot in Nude. In store, I fell for both the Gortika and the Bootylili.
In the end, I went with the Gortika because A liked them better and they're also seasonal, while the Bootylili will always be there if I decide I want them later on. :)

I had a wonderful birthday weekend and to cap it off, here's a recipe for yummy yet healthy Chicken Parm Burgers:
BRIETTA'S CHICKEN PARM BURGERS RECIPE |
Total Time: 25 minutes |
Ingredients: |
1 lb ground chicken |
1 cup shredded zucchini |
1/3 cup panko bread crumbs |
1/4 cup grated Parmesan |
1 teaspoon Italian seasoning |
1/2 teaspoon garlic powder |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
2 teaspoons extra-virgin olive oil |
1/3 cup marinara sauce |
4 slices reduced-sodium provolone (about 2 oz) |
3/4 cups baby spinach |
4 whole-grain hamburger buns, toasted |
Directions: |
1. Combine the chicken, zucchini, bread crumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper in a large bowl with hands. |
2. Form into 4 patties. |
3. Heat oil in a large nonstick skillet over medium heat. Add patties and cook until browned on one side for 4-6 minutes. |
4. Carefully flip. Pour equal amounts of marinara over each patty, then top with 1 slice of provolone each. |
5. Cover and continue cooking until patties are cooked through, 4-6 minutes more. TOp with spinach and serve on buns. |
