May Haul + Pea-Pine-Fu Smoothie

And another month is up! Time seriously flies as you get older. Here's a snapshot of last month's purchases, which should be my most expensive month ever and won't happen again:

I've been making a different smoothie everyday for A and I to bring to work for breakfast lately. He's moving on from his usual PB&J and wants to eat more healthfully so has requested smoothies now instead. It's actually very quick and easy to make and prepare so I'm happy with the change and have been picking up lots of fruits and some veggies to make them. Below is a recipe for his favorite smoothie so far :)

Pea-Pine-Fu Smoothie

Ingredients:
3/4 cup peach sorbet
3/4 cup white grape juice
1/2 cup soft silken tofu
1 tablespoon fresh lime juice
1-1/2 cups peeled and diced fresh peaches, frozen
1 cup diced fresh pineapple, frozen

Directions:
1. Combine the sorbet, grape juice, tofu, and lime juice in a blender.
2. Add the peachs and pineapple.
3. Blend until smooth.

* If you don't have time to freeze the fruits for 2-4 hours, add ice cubes instead to your liking (I use 6).

I pleasantly surprised him when I told him there's tofu in it, which he couldn't taste at all!
