Forever 21 Tribal Dress and Skirt + Light Coconut Cupcakes

Like with florals, I've been wanting pieces with tribal/ikat designs on it for a while now and picked some up when I finally went brick-and-mortar shopping at Forever 21. First up is this skirt.

Next up is this dress, which was too boxy and flowy so I added a belt. The lightweight fabric is perfect for the toasty temperatures that we've been having now during the daytime. :)

I also couldn't resist picking up this little guy, which is a mint lip balm. I plan to use it as a jewelry holder for traveling once it's all used up. :)

It's been a while since I've shared a recipe so here's one for Light Coconut Cupcakes, which are perfect for those days you're craving something sweet but don't want to feel guilty afterwards. :)

For cake
1 box moist vanilla cake mix
¾ cup + 2 Tbsp nonfat Greek yogurt
2 tablespoons coconut milk (lighter from the carton, not full fat)
¼ cup coconut oil
¼ cup applesauce
2 eggs
1 egg white
1 ½ teaspoons coconut extract

For topping
2 tablespoons light butter
1 package (8oz) low fat cream cheese
1 cup powdered sugar
½ teaspoon vanilla
½ teaspoon coconut extract

1. Preheat oven to 350 degrees.
2. Combine all cake ingredients using a mixer.
3. Spoon into cupcake tins or liners, using an ice cream scoop.
4. Bake 12-15 minutes, until a toothpick comes out clean.
5. While baking, combine all frosting ingredients with a hand mixer.
6. Cool frosting and then apply to cupcakes (there will be leftover).

Yields 24.
