I also couldn't resist picking up this little guy, which is a mint lip balm. I plan to use it as a jewelry holder for traveling once it's all used up. :)
It's been a while since I've shared a recipe so here's one for Light Coconut Cupcakes, which are perfect for those days you're craving something sweet but don't want to feel guilty afterwards. :)
Ingredients: |
For cake |
1 box moist vanilla cake mix |
¾ cup + 2 Tbsp nonfat Greek yogurt |
2 tablespoons coconut milk (lighter from the carton, not full fat) |
¼ cup coconut oil |
¼ cup applesauce |
2 eggs |
1 egg white |
1 ½ teaspoons coconut extract |
For topping |
2 tablespoons light butter |
1 package (8oz) low fat cream cheese |
1 cup powdered sugar |
½ teaspoon vanilla |
½ teaspoon coconut extract |
Directions: |
1. Preheat oven to 350 degrees. |
2. Combine all cake ingredients using a mixer. |
3. Spoon into cupcake tins or liners, using an ice cream scoop. |
4. Bake 12-15 minutes, until a toothpick comes out clean. |
5. While baking, combine all frosting ingredients with a hand mixer. |
6. Cool frosting and then apply to cupcakes (there will be leftover). |
Yields 24. |
