After that brief bout of snow we were hit with in NYC last week, I think Spring is finally upon us and is here to stay (yay!). The beautiful weather has motivated me to search yet again for a pair of aviators that look nice on my petite face so I was happy to notice a pair of Maui Jim sunglasses in the new Nordstrom circular, which eventually led me to these
Maui Jim 'Kolohe' 50mm Polarized Sunglasses. I was intrigued because the size (50mm) seems perfect for a petite-sized face like mine and I was happy to discover that they do, indeed fit well. :)
As mentioned before, I've been cooking a lot more than usual (every
night lately) and it's been quite the learning process. I'm much more
efficient at cooking now and have been relying on quick recipes since I
get home late on weeknights. Here's a quick and simple one that A has
requested I make again after eating it for the second time:
Black Bean and Corn Chicken Taco Bake |

Ingredients: |
1 rotisserie chicken, taken off the bone and cut into bite-size pieces |
1 jar of black bean and corn salsa (I used Newman's Own) |
10 small flour tortillas, cut into pieces |
2 cups shredded cheddar or Mexican blend cheese |

Directions: |
1. Grease baking dish and preheat the oven to 350 degrees. |
2. Mix the chicken, tortillas, cheese, and salsa together and pour into the baking dish. Cover with foil. |
3. Bake for 30-45 minutes or until hot. |
